Ingredients:

  • 1 cup rolled oats
  • 1/4 cup whole wheat pastry flour
  • 1 scoop vanilla protein powder
  • 1tsp cinnamon
  • 1/2 tsp all spice
  • 1/4 cup egg whites
  • 1/4 cup unsweetened apple sauce
  • 2 packets stevia
  • 1/4 cup chopped dried apricots
  • 1/4 cup dried cranberries

Preheat the oven to 350*F. Mix oats, protein powder, flour, cinnamon and all spice in a bowl. Then add the stevia, egg whites, apple sauce, dried apricots and dried cranberries. Mix well until all ingredients are incorporated.

CRITICAL STEP: Get a spoon. Scoop a little batter out of the bowl and taste. If it tastes good (and I’m pretty sure it will), carrry on.

Use a piece of aluminum foil to line a loaf tin (as shown below). This will make it super easy to remove the bars from the tin after they are baked. Scoop the oat mixture into the loaf tin. Use the back of a fork a piece of waxed paper to even off the top.

Bake for 15-20 minutes. Remove from the oven and allow to cool for about 30 mins before lifting the piece of foil and bars out of the pan. Carefully pull the aluminum foil away. Using a sharp knife, chop into 5 bars.
