Post-Workout Citrus Poppyseed Waffles
Don’t have a waffle maker? Don’t worry! These also work as pancakes. (Check out this post.)
Ingredients:
¼ c whole wheat pastry flour
1 scoop vanilla whey protein powder
1 packet stevia
1 tsp dried lemon peel (or grated peel from 1/2 lemon)
1 tsp poppy seeds
1 tsp baking powder
1/4 cup egg whites
1/4 cup fat-free plain, vanilla, or citrus-flavoured yogurt, plus more for topping
1 tsp vanilla extract
2 tbsp lemon juice
Combine all dry ingredients in a bowl and mix with a fork. Then add all wet ingredients and stir to remove lumps.
Heat the waffle iron and spray it well with cooking spray to prevent sticking. Add batter and cook for about 5 mins or until waffles are golden. (Cooking time will depend on your waffle maker and its temperature). Remove and repeat with remaining batter. This should make about 2 waffles.
Serve topped with additional yogurt and oranges or other citrus fruits.
