- 1/2 cup pure canned pumpkin
- 1 scoop vanilla protein powder (if you use whey protein, it should turn out like the first photo, and if you use casein protein, it will look like the second photo. Both are tasty!)
- 1/4 cup egg whites
- 1/3 cup water
- 1 packet stevia
- a whackload of cinnamon
Combine the ingredients above in a small bowl, mix well, and microwave for 2 – 2.5 minutes. Note: If you make the whey version, make sure you keep an eye on the bowl for the last 45-30s because the mixture will start to rise and may overflow.
Remove from the microwave, allow to cool slightly, and marvel at how much it tastes like pumpkin pie without the crust!
