Spelt Berry Waldorf Salad
Ingredients:
- 1 cup baked or grilled chicken breast, chopped into cubes
- 1/3 cup dry spelt berries
- 2 tbsp walnut pieces
- 1 apple (such as Golden Delicious or McIntosh)
- 2 tbsp dried cranberries
- 2 stalks celery, diced
Dressing:
- 2 tbsp fat free plain Greek yogurt
- ½ tsp cinnamon
- 1/8 tsp all spice
- 1 tbsp lemon juice
- ½ packet stevia
In a small saucepan, add 1/3 cup spelt berries and 3 cups of water. Bring to a boil, then simmer for 1 hour. (Note: I recommend checking the pot every 30 mins, because the first time I tried this, I didn’t have nearly enough water and there was some major burning! 3 cups should be enough, but check occasionally just to make sure.)
Core apple and chop it into pieces. In a medium-large bowl, add chicken, walnut pieces, apple, dried cranberries, celery, and cooked spelt berries.
In a small bowl, mix together all ingredients for the dressing. Pour over salad and toss to combine, then serve.
Serves 2.
