Vanilla Pumpkin Oatmeal
Ingredients:
- 1/3 cup rolled oats
- 2/3 cup of water
- 1/3 cup canned pumpkin
- ½ scoop of vanilla protein powder
- ½ tsp pumpkin pie spice
- Squeeze of agave or 1/2 packet of stevia, to sweeten if desired
- Optional topping: 1 tsp chopped walnuts or dried fruit
In a medium microwave-safe bowl combine the oats and water. Pop them in the microwave for two minutes. (Watch them to make sure they don’t overflow… if they rise too high, stop heating until they fall, then continue).
Remove oats from microwave and stir in the canned pumpkin, protein powder, sweetener (if using) and pumpkin pie spice. Stick it back in the microwave for another 30-45s, again, supervising it to prevent unwanted explosions, wastage, and cleaning efforts.
Note: Not all protein powders are created equal, and I’ve noticed that the thickness of the oats changes depending on the brand that I use. When you add the protein powder and pumpkin in, you may want to stir in some additional water until the oats reach your preferred consistency.
Top with crushed walnuts and/or dried fruit, and enjoy!

Yum, it looks like pumpkin pie filling.
It’s actually a lot like pumpkin pie filling! The oats and protein give it a little more staying power.
