Good Morning!

Is everyone excited for the Glee Madonna episode tonight!? In case you need to catch up, here’s a little promo for the episode/new season:

I forgot to mention on the weekend that there was another treat purchased during my grocery outing. I’ve tried Ezekiel wraps in the past, but I decided to buy the burger rolls this time. If you’re not familiar with Ezekiel breads, (by Food for Life), they are made from organic sprouted grains which means they contain greater levels of nutrients and dietary fiber than your regular types of bread. (One of these rolls has 6g of fiber and 9g of protein alone). The company makes a boatload of products suitable for people with diabetes, celiac disease, and other food allergies/intolerances. (Not that I have any of these issues – I just think these breads are super tasty).

Last night, I made some Moroccan Turkey Burgers with Spiced Yogurt Sauce for dinner, and used one of these little beauties as the bun. I switched up the recipe a bit and added some zucchini, chopped cilantro, and cayenne pepper to the patties (I know some people do anything to avoid veggies, but not moi!) This is how it all went down:

Note: I got 4 out of the meat that I had, but the recipe posted makes 5.

I grilled up some extra zucchini, red onion, and red peppers (brushed in a little olive oil with salt and pepper) in my little grill basket, and threw that on the barbie after I’d cooked the burgers on one side for about 5 mins. When everything was done, it looked like this:

(That’s the spiced yogurt sauce on the side – I guess that, and the apricots in the burgers is what make them Moroccan? I’m not really sure.. I found the recipe last summer and can’t remember where it came from!) The Ezekiel bun was a perfect burger holder, and very filling too!

Needless to say, I was feeling very satisfied afterwards. In other eats, lunch consisted of a monster chicken salad. I cooked some chicken strips in a frying pan, in a bit of fresh orange juice, lime juice, and lemon-pepper seasoning. I made a little dressing out of those three ingredients, plus some orange zest and vanilla yogurt (I didn’t have plain, so I figured that would be the next best thing, and it was tasty!)

Yes, those are bits of orange next to the chicken... didn't want to waste!

This morning’s workout was really good – I was on the cross trainer before my training session and managed to up some of the weights I used for the upper body workout with Mr. Trainer this morning – I love progress!!! I’m currently working on adding to the Workouts page, and am planning to add more to the cardio and weight training pages today. (In between studying of course! I’m also proud to report that I made my goal yesterday of chapters 1-6.. YAY!)

Were you following the Boston Marathon yesterday? A new men’s course record was set – a time of 2:05:52!! The fastest woman finished in 2:26:11. Pretty amazing hey?!?! I wish I was that fast! I tried to see where I’d place if I were to have run the same time as I did in the Toronto Scotiabank Waterfront marathon last year (which was a very flat race – I don’t imagine Boston would be as pleasant!), and I would have been approximately 419th out of 9468 women, or 3935th out of 22540 overall. That’s a flippin ENORMOUS race!! Still toying with the idea of running it next year…. we shall see! :)

Speaking of running, what kind of shoes do you wear? Runnersworld.com recently posted its Running Shoe Guide for Spring 2010, which is really helpful if you’re looking for a new pair. I absolutely LOVE Asics and am currently running in the GT-2150′s. do you have any running goals for this year? If you’re looking for a little inspiration, check out this video. How cool would it be to run on white bubbles??? The guy in it isn’t hard on the eyes either haha! :)

One more thing: Today is my first ‘Try Something New’ Tuesday, and I have several ‘new’ things planned – I’ll talk about them tomorrow! Are you doing anything new today??
