Good Morning Everyone!

I hope you’re enjoying your Labour Day long weekend! So far, mine has consisted of two spin classes, catching up with some friends I haven’t seen in a while, a lovely chat with my sister who turned 19 yesterday, and a big arts and crafts session (but more about that tomorrow!)

You may recall that last Tuesday, I tried ricotta cheese for the first time and decided it really wasn’t very nice. Well, rather than wasting it (which would be a real shame, considering it cost $5), I did a little recipe search and came up with a delicious Health-ified Lasagna, inspired by a recipe found on Epicurious.com. (See my recipe for the link to the original).

This was delicious!! The original recipe serves 8, but I didn’t really want to be eating lasagna for a week so I halved it and baked it in a loaf tin rather than the baking dish suggested. It made 4 lovely portions, 2 of which were devoured this weekend. There’s also another reason why I love this recipe, and that is because it is fairly cheap to create. As you may have read on Friday, one of my goals for the coming months is to stick to my grocery budget. Over the next little while, I plan to dedicate a few posts to grocery budgeting and cooking healthy meals without spending a fortune, so stay tuned for more recipes and tips!
