Good morning all!
First off, I want to start by saying thank you for all your comments on my 1-year blogiversary post! I cannot believe some of the changes you guys have made to improve your health this year – everything from signing up for races, confronting disordered eating, eliminating processed foods, starting to strength train, and losing weight. Yesterday’s post was all about the goodies you can win, but I celebrated my blog birthday in a few other ways too. On the weekend, one of my roomies and I made our first trip of the season to St Jacob’s, one of the two fantastic farmers markets in the area.
Although the local producers aren’t quite in full-on market mode yet, we still managed to find some gorgeous fruit and veg.
There’s a ton of stuff to buy at this market – every thing from greens to perfume and knock-off handbags, hockey jerseys, belts, sunglasses, cheese, meat, carpets, and home decor.
There’s also a lot of food options – some healthy(ish) and some not-so-healthy. I was particularly fascinated by this contraption:
The donuts fry up in the little box bit, then they move along and the scoopy thing flings them over the edge and into a big dish where they get smothered in powder and sugar.
If you’re into sweets and sugar comas, you can’t go wrong with these:
Both of us left the market with tons of berries. I had big blogiversary breakfast plans for mine – plans far more nutritious than funnel cake and mini donuts.
Blueberry Flax Protein Pancakes for One
Ingredients:
- 2 tbsp rolled oats
- 1 scoop vanilla protein powder
- 1 packet stevia
- 1/2 tsp cinnamon
- 1/8 tsp baking soda
- 1/4 tsp baking powder
- 1 tbsp ground flaxseed
- 1/3 cup egg whites
- 2 tbsp unsweetened almond milk
- 1/2 tsp vanilla bean paste or vanilla extract
- 1/3 cup blueberries
Optional Toppings:
- Greek yogurt
- strawberries, blackberries, blueberries
Combine all dry ingredients in one bowl and wet ingredients in another (except blueberries). Mix the wet ingredients well, then pour into the dry bowl.
Stir until batter is even (you should have about 1 cup), then add the blueberries and mix gently. Pour the batter into a non-stick frying pan in batches. Cook for a few minutes on each side, flipping when bubbles start to form on top of the pancakes. Top with vanilla Greek yogurt and berries.
Serves 1.
Nutrition per serving: 283 calories, 6g fat (1g saturated), 70mg cholesterol, 365mg sodium, 23g carbs, 5g fiber, 9g sugar, 35g protein.

Nom. Nom. Nom. The batter was a little thin at first but letting it sit for a minute seems to help it thicken. If you’re not keen on protein powder, I think you could probably just sub a scoop with 30g of whole wheat flour, or any other flour you like.

Anytime I make protein pancakes they turn out so flat and thin – these look nice and substantial! Can’t wait to try.
I think the baking powder and egg whites are what make them puff up a bit.
I would eat your pancakes over the funnel cakes anyday

the st jacobs market is totally awesome! i go every once in a while with my dad – he goes religiously every thursday, so sometimes i tag along. so glad you got out there with your roomie! i love the variety of products and the low prices, plus you can support local farmers – win!
my favourite treat is the baked goods from the stone crock bakery, but i also love getting apples, melons, zucchini, lettuce…

They have some of the biggest apples I’ve ever seen there!! I can’t wait for the summer to come – like you said, the prices are awesome!
Ah, that farmer’s market sounds like so much fun! I’d be all over the berries too!!
I’m not huge on pancakes – but I’d definitely give your protein pancakes a try!
I have to try these pancakes!
Blueberry pancakes are my favorite! I use whole wheat pastry flour, plain greek yogurt, eggs, blueberries and I can’t really remember what else off the top of my head! I just love stocking up on all of the great veggies at the farmer’s market. There aren’t many fruits available at the one in my community!
OK, now I’m going to have to try your pancakes. I seem to make a batch of my own each week, and even freeze some for later.
I tend to go with and euqal amount of egg whites, oatmeal, and cottage cheese, (usually about 1 cup), a scoop or 2 of transform+ pulse – Natural Vanilla Almond (combination of vanilaa protein powder and veggie greens – all in one), cinnamon, splenda, chia and flax seeds.
Usually makes about 12 pancakes. Great snack on the go, too.
Oooh great idea to put the chia seeds in! I’ll have to try that next time. Cinnamon is a must for me too – I don’t think I’ve ever made pancakes without it!
I just made a pancake for breakfast this am also:) I used a recipe from Oh She Glows:
1/2 cup spelt
1/2 milk
1/2 teaspoon baking powder
cinnamon
Topped with Greek yogurt, mango, blueberries, and banana.
It was delish!

I made protein pancakes this morning for breakfast for the first time and they were delicious! All them fresh berries look so good, I love when berries are in season

Brilliant! I’ve tried alot of healthy pancake recipes/made up my own but this is definitely the best! I omitted the sweetener (I don’t use sweeteners) and the vanilla (poor uni student who doesn’t have any
haha) and the blueberries. So light and fluffy and delicous! Topped with spinach and 1/2 a banana blended. mmmmm
