Glee on Tour!! I mentioned this months ago when we bought our tickets and I can’t believe the time has finally come! I’m especially excited for this fine character:

I must admit though, I’ve been a bad Gleek lately. I missed the season finale a few weeks ago and still haven’t had time to watch it so this is at the top of my agenda for tonight. That’s right, I like to get crazy and out of control on my Friday evenings.

Anyways, yesterday when I was talking about avoiding the afternoon energy wall, I promised you a delicious smoothie recipe and some feel-good tunes. And here you have them! Starting with the smoothie….

Peaches and Greens

Ingredients:

  • 2 or 3 frozen spinach nuggets, or a big handful of fresh spinach
  • about 1 cup raw kale
  • 1 1/2 scoops vanilla chai Vega Whole Food Health Optimizer (you can check out my review here), or sub your preferred vanilla protein powder
  • 1 ripe peach, pitted and frozen
  • 1/2 tsp each cinnamon, ground ginger (optional) and guar gum (optional)
  • 1 tsp pure vanilla bean paste or vanilla extract
  • 1 packet stevia
  • 2 cups of water
  • lots of ice

Place all ingredients except for the ice in a blender. Blend on low until the frozen spinach and peach have broken down into smaller pieces (about 15 seconds).

Add in the ice, then blend on high until the mixture is smooth. Add a little water if the consistency is too thick for your liking, then continue blending until it is incorporated.

Makes 1 monster smoothie.

Nutrition: 304 calories, 6g fat (1g saturated), 0mg cholesterol, 100mg sodium, 42g carbs, 17g fiber, 14g sugar, 26g protein.

If you haven’t had breakfast yet, please, just go and make this now. Actually, even if you have had breakfast, go make this. You won’t be disappointed. ;)
