Fun fact: May is National Strawberry Month!
To be honest, with spring arriving so late it feels early to be celebrating fruits but alas, here we are and I will take ANY reason to eat more strawberries. Smoothies, blended into banana soft serve, dipped in chocolate, straight-up on their own, mixed into salads… I don’t discriminate.
I could tell you all about why the ingredients of this recipe are wonderful from a health perspective but I’m going to keep that short this week because it feels like there’s been a lot of nutrition talk here lately. Don’t get me wrong – that stuff is my jam – but it’s not ALL I like to talk about. Instead, I thought I’d show you photos while telling you about some of the things on my mind lately, like…
The official first day of summer is June 20th, and this year I’m feeling especially compelled to make the most of my non-work time. I’m talking heading to the beach after work, going for walks for no particular reason other than to enjoy the sunshine and scenery, weekend hikes followed by cooling off at the pool, and maybe a few long weekend getaways to some places near Vancouver that I haven’t seen yet. Myself and a couple of friends from work have decided we’re going to do these things on the regular, and I’m SO pumped to make it all happen.
At the same time though, the planner in me is already getting a case of premature FOMO that I won’t be able to fit everything in. It sounds so silly when I read this back to myself but that’s just where my head is at right now. While summer fun is a big priority for me, there are also so many things I want to do here with the blog, people I want to work with, and lives that I have an opportunity to impact with the nutrition and wellness work that I do. My brain alternates between “must. do. ALL THE THINGS” and “must. calm. down.” Do any of you guys struggle with this? I’d love to hear your thoughts in the comments.
My recent closet clean-out
Guys, this felt SO good. In the process of doing a seasonal flip of my clothes from storage to my closet, I went all Marie Kondo and got rid of heaps of things that don’t bring me joy. These are things I haven’t worn since I moved here 2 years ago, so it just felt like time to go for it. We’re talking a ruthless purge (by my standards, at least), the kind you have to really be in the mood for. While it’s incredibly refreshing to have a sense of organization and breathing room in my closet now, what feels just as rewarding is that everything I didn’t need has been donated to a local women’s shelter. Win-win!
I used to think this was a total waste of money because flowers don’t last very long, but I continue to be amazed by how happy it makes me feel to have them in my apartment. I think part of it is the process of picking them out and arranging them (not that I have the skills of a florist by any means), and seeing them in my bathroom, next to my bed and on my kitchen table throughout the week makes me smile like a weirdo… but I love it.

Have you found this beauty yet? One of my teammates at work told me about it earlier this week and I’ve been listening ever since. The randomocity of the tunes is fabulous – everything from The Backstreet Boys and Smash Mouth to Journey and Michael Jackson. I just might take more showers because of it. Sometimes you just need to belt out Don’t Stop Believing to get properly set up for the day, ya know?
Ok, salad time. This Strawberry Avocado Salad has so many great textures going on – crisp snap peas and cucumber, crunchy cashews, creamy avocado, and of course, juicy strawberries. As for the dressing, I opted for a mixture containing two of my favourite staple ingredients, tahini and hemp seeds. Together they make the BEST, most creamy and delightful homemade dressings that are a squillion times better than most of the store bought ones I’ve tried.
While you could totally serve this on its own, it’s also really easy to turn it into a complete meal by adding your protein source of choice – any sort of grilled fish or chicken (sustainably raised and locally sourced is ideal), canned salmon, tempeh, roasted chickpeas, and hard boiled eggs would all be great choices.
Strawberry Avocado Salad with Hemp Tahini Dressing
Prep Time: 15 mins
Cook Time: 0 mins
Ingredients (2-4 servings)
- 6 cups mixed baby lettuces
- 3/4 cup thinly sliced sugar snap peas
- 1/2 large English cucumber, spiralized into ribbons
- 1 cup sliced organic strawberries
- 1/2 ripe avocado, pitted, peeled and diced
- 1/4 cup raw cashews (I used Navitas Naturals organic unsalted ones)
- 2 tbsp roughly torn fresh mint and parsley
- 1 tbsp very finely minced fresh basil
For the dressing (makes about 2/3 cup):
- 1/3 cup tahini
- 1/4 cup sliced cucumber
- 2 tbsp hemp seeds
- 2 tbsp lemon juice
- 2 tbsp water (or as needed, to thin)
- dash of black pepper
Make the dressing: Whirl all ingredients in a food processor until completely smooth, then pour them into a jar. Note that the dressing will thicken as it sits, so you may want to shake it up with a bit of water before pouring on the salad.
Prepare the salad ingredients as directed above. If you don’t have a spiralizer, you can easily create cucumber ribbons by slicing long strips with a veggie peeler. Combine everything together in a bowl, tossing gently with dressing.
Protein options: Roasted or plain chickpeas, beans, grilled tempeh, baked or grilled fish, or organic grilled chicken would all work perfectly!
