Every once in a while, I look back at my oldest blog recipes, specifically for ones that need a little “help” – in other words, the recipes whose photos were taken with my iPhone or point-and-shoot camera back in the very early blogging days. While some of those photos are totally cringe-worthy (and therefore purposely not easy to find!), this little exercise is also a fun one because it’s encouraging to see how far things have come since the blog was born.

One of the desserts I came across was an old chia pudding parfait recipe – a delicious creation, but my camera’s white balance was totally off and I have NO idea what I was thinking when it came to props! It was a prime candidate for improvement, and as a result, these Blackberry Banana Chia Pudding Parfaits were born.

For those of you who just might have indulged in a few too many treats over the holidays, I think you’ll enjoy the lightness of these. Not only are they light, creamy and coconutty, but the nutrition benefits are pretty awesome too:

  • Fiber and essential fats in the chia seeds will help to keep you feeling satiated.
  • Collagen and antioxidant-rich berries are fantastic for the health of our hair, skin and nails.
  • The fats in the chia seeds help our bodies to make better use of the valuable nutrients in the blackberries.
  • Collagen is also excellent for digestion as it helps to reduce gut inflammation and heal the gut lining.

Side note: Collagen is an optional mix-in and won’t affect the flavour, so if you don’t have any on hand or if you’re vegan/vegetarian, feel free to leave it out completely.

Blackberry Banana Chia Pudding Parfaits

Description

Packed with fiber, healthy fats and skin-boosting superfoods like collagen and chia seeds, these Blackberry Banana Chia Pudding Parfaits are a great grab-and-go breakfast, snack or dessert.


Ingredients

Blackberry Layer

Banana Layer

  • 1 ripe medium-sized banana, peeled and well-mashed
  • 1 1/2 cups unsweetened coconut milk beverage
  • 1/3 cup chia seeds
  • 1 tsp lucuma powder (for an added sweet caramel-y flavour) – see note
  • 10g serving collagen powder
  • 1 tsp vanilla extract

Toppings (all optional):

  • coconut flakes, blackberries, and/or sliced banana

Instructions

  • For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries with the back of a fork. (Alternatively, puree them in your blender.) The mixture will be very runny, but the chia seeds will absorb the liquid and create a gel the longer you leave them to sit. Let the chia seeds work their magic overnight, or for about 4-5 hours.
  • For the banana layer: Combine all ingredients in a bowl. Stir well, then cover and refrigerate with the berry layer.
  • Working in layers, distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries, toasted coconut and/or banana slices.
  • Seal the jars with their lids. These will keep in the fridge for up to 3 days.

Notes

If you don’t have lucuma, feel free to add your favourite natural sweetener of choice, to taste. Lucuma is a low-GI natural powdered ingredient that also offers antioxidants, fibre, calcium and potassium, but you can add a liquid or powdered sweetener here if you prefer. The banana adds quite a bit of sweetness on its own, so you may find you don’t need anything else.
