Your omega-3 essential fatty acids give me what I can’t make myself, for stronger hair, smoother skin, a healthy heart and an uber-geeky brain. Occasionally I’m asked as a food blogger about what my last meal would be, as well as what meal I could eat forever and never tire of it. Salmon is always the answer (or at least part of it), and if I happen to date a guy in the future who shares that same feeling, his next-date potential will instantly double.

As is the case with most of the salads I post, this is not the kind that is going to tame your hunger for a whopping 2 minutes. No no, this is a PROPER salad that will give you the energy to do whatever it is you have to get through today. The combo of protein and healthy fats (avocado, salmon and EVOO, ohhh myyyy!) will provide longer-lasting fuel, while also keeping your blood sugar stable. As I mentioned in my ode to salmon above, these same foods can also work wonders as “beauty foods” by improving skin texture, supporting cell repair, and strengthening our hair and nails. In other words, it’s pretty much a spa date in food form.

The recipe below is for 1 person, but the Green Goddess Dressing will make enough for leftovers. I love using it as a dip for serving with crudite platters, scooping it into wraps, and as a topper for some of my savoury breakfast bowls. Adjust the seasonings as you like, and feel free to add other herbs to the mix if you have them on hand. (Dressings are what I make whenever I’ve got fresh herbs to use – you’ll never need to let any go to waste again!)

Green Goddess Salmon Salad

Description

Sometimes simple ingredients combine to make the most delicious dishes. This Green Goddess Salmon Salad is an example, packed with protein, healthy fats and fibre, it’ll keep you full for hours. Bonus: leftover Green Goddess Dressing doubles as a dip and spread for wraps, sandwiches, burgers and more!


Ingredients

Scale
  • 1 fillet uncooked wild caught salmon (about 130-140g raw weight)
  • 1 tsp olive oil + 1/4 tsp minced garlic + sea salt + black pepper
  • 2 big handfuls mixed baby greens
  • 23 radishes, thinly sliced
  • 1 boiled egg, peeled + slices
  • 1/2 cup cucumber slices or ribbons
  • 2 tbsp loosely packed fresh dill
  • sliced avocado, sprouts and lemon slices, to garnish

For the green goddess dressing:

  • 1/2 ripe avocado
  • 2 tbsp each extra virgin olive oil, minced shallot, apple cider vinegar, and lemon juice
  • 1/4 cup loosely packed fresh parsley and dill (or whatever herb combo you like)
  • generous pinches of sea salt and black pepper

Instructions

  • Preheat the oven to 400F and line a baking sheet with parchment paper.
  • Make the dressing by blitzing all ingredients in a blender or food processor until completely smooth. Transfer to a jar and set aside.
  • Place the salmon on the baking sheet. Whisk together the olive oil and garlic. Brush it over the salmon and sprinkle with sea salt + black pepper.
  • Arrange a few lemon slices on top of the  salmon. Season again, then bake for 10 minutes.
  • Meanwhile, prepare the salad ingredients as directed above. Toss everything except the avocado and garnishes together, squeezing a few lime wedges and a little drizzle of extra virgin olive oil on top. Then transfer to a serving bowl/plate.
  • Switch the oven to its broil setting and let the salmon cook for about 5 more minutes. It should start to darken and get a bit crispy on top.
  • Once cooked, plate the salmon on top of the salad. Add avocado, garnishes, and spoon green goddess dressing over top.

    1. Hi Jaquline! Glad you’re excited about this recipe. Yes, this recipe certainly could be incorporated into an eating plan that aligns with weight loss goals. The protein and healthy fats will help to keep you feeling satiated for longer, and the volume of the vegetables (and their fibre) will help to ensure you feel like you’ve eaten a substantial amount of food. (Nobody likes to feel like they’re hungry and can’t eat anything while losing weight!)
