1. Recipe of the Week. Remember a couple of weeks ago when I told you about all the delicious food I enjoyed out in Vancouver last month? I’ve been on a mission to re-make some of my favourites since arriving home and the first item on that list was the All Greens Salad that I ordered twice from Heirloom. I’m calling my version the Zucchini Noodle Salad with Creamy Avocado Dressing, and it’s pretty darn close to the real thing.

The salad doesn’t actually come with an egg. When we arrived the first time, it was for lunch. I wasn’t ravenous but since it was the day before the race I wanted to ensure I stuck with some simple foods that I know work well with my digestive system. I asked if I could add some sort of protein like an egg to the top of my salad, and the waitress (who was stunning, like many other waitresses in Vancouver – there must be something in the water) looked at me like I had 5 heads. My dining buddies did too.

Our conversation went like this:

Waitress: “An egg? Like how would you like it cooked?”

Me: “Over easy would be perfect.“

Waitress: “And did you want it on the side, or…”

Me: “Sure. Actually can you just plop it right on top?”

And plopped right on top is how it came.

The salad looked beautiful, and I purposely asked for the creamy avocado dressing to be on the side so that the yolks could ooze through all the zucchini noodles. Don’t get me wrong – it was delightful too. I’ve tried to remake it to the best of my ability and while it’s still not quite there, it’s close.

If you don’t have a spiralizer for the zucchini, try using a julienne peeler or regular veggie peeler instead. This creates more ribbon-like noodles but they’ll still be delicious!

2. My first 5 Peaks race. This isn’t a true Tuesday trial because it happened this weekend, but I really want to tell you about this new-to-me race series. If you’ve been following along since spring of this year, you may remember that trail running – specifically, completing The North Face Endurance Challenge Half Marathon – was one of my goals for the year. That happened in July, and although tough, it was a ton of fun. I trained several times on local trails, but had I really wanted to prepare properly, I would have done some 5 Peaks trail races first.

If you live in Canada you might have already heard of 5 Peaks, but if not, I’ll give you a bit of background. They organize a number of country-wide events which are about a whole lot more than running. There’s a huge emphasis on community, family, appreciating nature and being environmentally sustainable. 5 Peaks was founded in Vancouver (and we all know how I feel about that magical place) in 1998 and has since increased their race participation 20x over by expanding across the country. So what was my first experience like? Well I’ll admit that I wasn’t in the best of moods driving to the race site on Saturday morning. It had POURED rain throughout the night and was still raining when I left my house. It was going to be a muddy, slippery morning and the thought of just going to the gym sounded so much more appealing at the time. But that changed very quickly.

Once I arrived at the Kortright Centre, about 1 ½ hours from home, I immediately saw some of my running buddies setting up their gear. I checked in and picked up my race kit, then we chatted while the kids races took place. The Sport (7k) and Enduro (14k) events began at 10am, and I signed up for the Enduro, thinking that if I was going to drive all the way there, I might as well get the full experience!

The course was a loop that Enduro runners did twice. It had some fairly challenging hills which I’d learned back at The North Face Endurance Challenge are often better to power walk as opposed to run in order to conserve energy. The terrain wasn’t very technical but the rain definitely made wooded areas slick and there was a section that required us to cross in knee-deep water. It was a little shocking the first loop round but by the 2nd it felt super refreshing!

There were families cheering along the course for their loved ones, and for complete strangers like me. I was nervous at the start because my training was a bit lackluster last week, but once I got going it was such a great feeling. Absolutely nothing about the atmosphere felt intimidating or high-pressure as it has in many of the road races I’ve done this year.

I finished the race and caught up with Jess (she wasn’t racing but came to cheer me on because she’s awesome like that) and the others I’d been hanging out with before. There was plenty of post-race food for everyone, participants and spectators of all ages, and fabulous prizes at the awards ceremony.

5 Peaks Medal - 3rd place

I ended up coming in 3rd in the 20-29 age group and the 4th woman overall, but it wasn’t really my race result that made me so happy about being there. What made it so fantastic was the family-like feeling that hit me as soon as I arrived, and the willingness of everyone to help each other and have as much fun as possible. This was my first 5 Peaks race and it certainly will not be my last!

In other news, can someone please recommend a self-tanner that doesn’t stink or streak? My legs need some help!
