Are you excited? I’m excited. But I bet you couldn’t tell, right?

Seriously though, it finally feels like Christmas now. I’m not sure if it was the massive snowfall (by Vancouver standards) that we had on Sunday night, the writing of Christmas cards, the wrapping of presents, or the relief of getting some big projects out of the way that finally got me in the spirit, but I’m feeling pretty excited. My mum is arriving here on Saturday and we’ve got a fun agenda filled with all sorts of festive things ahead. There will be Christmas markets, light tours, plus a few other surprises I won’t mention because she’s probably reading this.

Speaking of fun and festivities, on Monday I mentioned taking a digital detox and why I think we could all benefit from it, especially during this time of year. Last week it occurred to me that since starting this blog back in 2010, I haven’t taken a single Monday, Wednesday or Friday off. It’s easy to do blog work day after day because it feels more like fun than work, but alas, I’ve decided to take a true break until……. next Wednesday.

That’s right, just a quick hiatus, but nevertheless, a full-on detox from all blog-related tasks and most social media. Although I’m sure it will feel odd, I’m very much looking forward to unplugging and am pretty sure I’ll come back bursting with all sorts of delicious and inspiring things to share with you. Sometimes you have to disconnect to get the creative juices flowing, ya know?

With all that said, I couldn’t resist sharing one more recipe with you before the holidays. In the words of my two co-workers who performed some very thorough taste testing – a dirty job but someone had to do it – this one “tastes just like Christmas.” It’s a fruit crisp made with a mix of berries and apples, topped with a golden crispy layer of oats (gluten free, of course) and almonds.

Rather than using a whole bunch of sugar and butter, you’ll find maple syrup and coconut oil in the topping. This makes it taste just like a traditional crisp (one might argue it’s even better!) but much healthier. Enjoy it for dessert, a snack, or even breakfast – I don’t think you’ll be disappointed!

Spiced Apple Berry Crisp

Prep Time: 10 mins

Cook Time: 40 mins

Ingredients (6-8 servings)

    For the filling:

    • 2 medium apples, cored and diced into small pieces
    • 3 cups organic mixed berries, defrosted if frozen
    • 1 tbsp maple syrup
    • 1/2 tsp vanilla extract
    • 1/4 tsp cinnamon

    For the topping:

    • 1 1/4 cups gluten-free rolled oats
    • 1/2 cup sliced or slivered almonds
    • 1/3 cup maple syrup
    • 3-4 tbsp melted coconut oil (add the extra tbsp if needed to help the mixture clump together)
    • 1 tsp cinnamon
    • 1/4 tsp ground ginger
    • 1/8 tsp ground cloves

    Instructions

    Preheat the oven to 375F.

    In a large bowl, mix together the ingredients for the filling. Pour it into a baking dish approximately 8×10″ in size.

    In a food processor, pulse half of the oats until they form a flour. Combine them in a bowl with the remaining ingredients for the topping, stirring well until it develops a crumbly texture.

    Pour the topping over the fruit, spreading it to the edges of the baking dish in an even layer.

    Bake for 40 minutes, or until the top turns golden brown.
