Description
Cauliflower rice is the secret ingredient in this low-sugar green smoothie, adding creaminess, volume, and a whole lot of vitamin C!
Ingredients

- 1 scoop vanilla Vega Sport Performance Protein
- a massive fistful of fresh baby spinach
- 1/2 cup frozen cauliflower rice
- 1 1/4 cups unsweetened almond milk
- 1 tbsp natural cashew butter
- 1 heaping tsp maca root powder
- 1 tsp vanilla extract
- toppings: strawberries, blueberries, flaked unsweetened coconut, dried goldenberries, raw cashews and hemp seeds
Instructions
- Add everything to the blender except toppings and whirl it up until completely smooth. The consistency should be fairly thick, but feel free to add more almond milk if you prefer to enjoy this as a smoothie in a glass.
- Pour into a bowl, garnish with toppings and serve.
Notes
- If you don’t have cauliflower rice, simply use small cauliflower florets – cauliflower rice is just easier to blend. Frozen cauliflower will help make the smoothie thick so no ice should be needed (which can dilute the flavour).
