Ingredients
Scale
Blackberry Layer
- 1 1/2 cups unsweetened coconut milk beverage
- 1/3 cup chia seeds
- 1 cup blackberries (fresh, or thawed if frozen)
- 1 tsp acai powder (optional, for extra antioxidants)
- 10g serving collagen powder (I used Vital Proteins Unflavoured Collagen Peptides)
- 1 tsp vanilla extract
Banana Layer
- 1 ripe medium-sized banana, peeled and well-mashed
- 1 1/2 cups unsweetened coconut milk beverage
- 1/3 cup chia seeds
- 1 tsp lucuma powder (for an added sweet caramel-y flavour) – see note
- 10g serving collagen powder
- 1 tsp vanilla extract
Toppings (all optional):
- coconut flakes, blackberries, and/or sliced banana
Instructions
- For the blackberry layer: Mix all ingredients together in a bowl, mashing the blackberries with the back of a fork. (Alternatively, puree them in your blender.) The mixture will be very runny, but the chia seeds will absorb the liquid and create a gel the longer you leave them to sit. Let the chia seeds work their magic overnight, or for about 4-5 hours.
- For the banana layer: Combine all ingredients in a bowl. Stir well, then cover and refrigerate with the berry layer.
- Working in layers, distribute the blackberry and banana layers between 4 small mason jars. Top with additional berries, toasted coconut and/or banana slices.
- Seal the jars with their lids. These will keep in the fridge for up to 3 days.
Notes
If you don’t have lucuma, feel free to add your favourite natural sweetener of choice, to taste. Lucuma is a low-GI natural powdered ingredient that also offers antioxidants, fibre, calcium and potassium, but you can add a liquid or powdered sweetener here if you prefer. The banana adds quite a bit of sweetness on its own, so you may find you don’t need anything else.
