I’ve only been here 2 days, but so far have been on 3 apartment tours, secured a US phone number, investigated renter’s insurance and reunited with one of my long-time friends whose couch I crashed on last night. You know how there are those people who you can go years without seeing, yet pick up exactly where you left off? He’s that kind of friend, and is part of the reason LA sort of felt like home before I even got off the plane.

On the house hunting front, there’s good things happening there too – I think I’ve got one! The apartment I’m planning to rent has a pool view, recently upgraded kitchen, community barbecues, and a big patio for gardening (and possibly growing some of my own veggies + herbs!) I’ll be able to walk to work, and I’ve got all my essentials (meaning the beach, gym, hot yoga, grocery stores, poke bars, Drybar and Sephora) within walking distance. Provided all goes according to plan and the background checks show that I’m not a criminal, I should be able to move in this week. Hurrahhhh!

Knowing that I probably wasn’t going to have access to a kitchen this past weekend to cook you guys something marvelous, I made a couple of extra recipes prior to leaving Vancouver. This Chipotle Chicken Buddha Bowl was a big winner on taste, and just so happens to be very suitable for big-batch meal prep if you want to double, triple or quadruple the recipe quantities called for below. You can cook your chicken yourself if you like, but if you’d rather, a cooked rotisserie chicken from the grocery store works just as well (and is much more convenient, in my opinion!)

Lastly, know that the chipotle sauce is AWESOME. Even if you’re only making 1 serving of the recipe, don’t worry about your extra sauce leftovers. Spread it on crackers, toast, wraps, sandwiches, or use it as a veggie dip. While my kitchen tools are currently boxed up and en route to California on the back of a truck, you can bet that as soon as my beloved Vitamix gets delivered, a batch of chipotle sauce will be one of the first things that I make!

Chipotle Chicken Buddha Bowl

Description

Of all the ways to use up a rotisserie chicken, this Chipotle Chicken Buddha Bowl is one of my favourites! Paleo, gluten-free and full of flavour, this recipe is perfect for batch meal prep and can be made in 20 minutes or less.


Ingredients

Scale

For the cauliflower rice:

  • 1 cup cauliflower rice
  • 2 tbsp torn fresh cilantro
  • 1 tsp lime juice
  • pinch of cumin

For the rest:

  • 1 cup shredded romaine lettuce
  • 120g shredded rotisserie chicken
  • 1 cup mixed diced bell peppers
  • ½ cup diced cherry tomatoes
  • 2 tbsp finely diced red onion
  • ¼ sliced avocado

For the chipotle sauce (you will have lots leftover):

  • 1 red bell pepper, seeded and diced (roast it first for the best flavour!)
  • 1 small clove garlic, minced
  • 2 tbsp lime juice
  • 1 tbsp each extra virgin olive oil and tahini
  • ½ tsp chipotle pepper flakes
  • pinch of sea salt

Instructions

  • Use a blender or food processor to whirl together all ingredients for the chipotle sauce. Once smooth, transfer to a small jar.
  • Toss together the ingredients for the seasoned cauliflower rice. Pour them into a serving bowl, followed by the romaine lettuce.
  • Prepare the remaining ingredients as indicated. Stir together the diced bell peppers, cherry tomatoes and red onion.
  • Arrange the bell pepper mixture and avocado slices on top of the lettuce and cauliflower rice.
  • Add a few tablespoons of chipotle sauce to the chicken and stir to coat. Pour the chicken into your serving bowl.
  • Garnish with cilantro sprigs. Serve with additional chipotle sauce and lime wedges.

  1. Amazing recipe! I doubled the recipe and it was definitely a hit! Has the perfect amount of spice and its so healthy! I’ll definitely make this one again.
